Quinoa and Black Bean Salad

Serves: 4 | Prep Time: 15 mins | Cook Time: 15 mins

Ingredients:

  • 1 cup quinoa, rinsed
  • 1 1/2 cups water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 1/4 cup fresh cilantro, chopped

For the Dressing:

  • 3 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp ground cumin
  • Salt and pepper, to taste

Instructions:

  1. Cook Quinoa
    In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until water is absorbed and quinoa is fluffy. Let cool.
  2. Prepare the Dressing
    In a small bowl, whisk together olive oil, lime juice, cumin, salt, and pepper.
  3. Assemble the Salad
    In a large bowl, combine cooked quinoa, black beans, tomatoes, bell pepper, red onion, corn, and cilantro.
  4. Toss and Serve
    Pour the dressing over the salad, toss to combine, and serve chilled or at room temperature.
