Ingredients:
- 1 cup quinoa, rinsed
- 1 1/2 cups water
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup corn kernels (fresh, frozen, or canned)
- 1/4 cup fresh cilantro, chopped
For the Dressing:
- 3 tbsp olive oil
- 2 tbsp lime juice
- 1 tsp ground cumin
- Salt and pepper, to taste

Cook Quinoa
In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until water is absorbed and quinoa is fluffy. Let cool. -
Prepare the Dressing
In a small bowl, whisk together olive oil, lime juice, cumin, salt, and pepper. -
Assemble the Salad
In a large bowl, combine cooked quinoa, black beans, tomatoes, bell pepper, red onion, corn, and cilantro. -
Toss and Serve
Pour the dressing over the salad, toss to combine, and serve chilled or at room temperature.
