Pumpkin Pie Overnight Oats with Chia

Serves: 2 | Prep Time: 5 mins | Chill Time: 4+ hours (overnight)

Ingredients:

  • 1 cup rolled oats
  • 1 cup almond milk (or milk of choice)
  • 1/4 cup pumpkin purée
  • 1 tbsp chia seeds
  • 1 tbsp maple syrup (or honey)
  • 1 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • Optional toppings: chopped nuts, pumpkin seeds, or a sprinkle of cinnamon

Instructions:

  1. Mix Ingredients
    In a bowl or jar, combine oats, almond milk, pumpkin purée, chia seeds, maple syrup, pumpkin pie spice, vanilla, and salt. Stir well to combine.
  2. Chill Overnight
    Cover and refrigerate for at least 4 hours, or overnight, until oats and chia seeds are softened and the mixture is thickened.
  3. Serve
    In the morning, give the oats a good stir, then add your favorite toppings like nuts, pumpkin seeds, or an extra sprinkle of pumpkin pie spice.
