- 1 tbsp chia seeds

- 1/2 tsp vanilla extract
- Pinch of salt
- Optional toppings: chopped nuts, pumpkin seeds, or a sprinkle of cinnamon

Mix Ingredients
In a bowl or jar, combine oats, almond milk, pumpkin purée, chia seeds, maple syrup, pumpkin pie spice, vanilla, and salt. Stir well to combine. -
Chill Overnight
Cover and refrigerate for at least 4 hours, or overnight, until oats and chia seeds are softened and the mixture is thickened. -
Serve
In the morning, give the oats a good stir, then add your favorite toppings like nuts, pumpkin seeds, or an extra sprinkle of pumpkin pie spice.
