Lemon Poppy Seed Loaf

Serves: 8 | Prep Time: 15 mins | Cook Time: 50 mins

Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 tbsp poppy seeds
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup coconut sugar
  • ⅓ cup almond milk (or other plant-based milk)
  • ⅓ cup vegetable oil
  • ¼ cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • For Lemon Glaze (Optional):
    • ½ cup powdered sugar
    • 1–2 tbsp fresh lemon juice

Instructions:

  1. Preheat Oven
    Preheat your oven to 180°C (350°F) and line a loaf pan with parchment paper or grease it lightly.
  2. Mix Dry Ingredients
    In a large bowl, whisk together the flour, poppy seeds, baking powder, baking soda, salt, and coconut sugar.
  3. Combine Wet Ingredients
    In a separate bowl, mix almond milk, vegetable oil, lemon juice, lemon zest, and vanilla extract.
  4. Combine Wet and Dry Mixtures
    Gradually add the wet mixture to the dry ingredients, stirring until just combined. Do not overmix.
  5. Bake
    Pour the batter into the prepared loaf pan and bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool and Glaze
    Allow the loaf to cool completely. If desired, mix powdered sugar and lemon juice to create a glaze and drizzle it over the loaf.
