Ingredients:
- 1 ½ cups all-purpose flour
- 1 tbsp poppy seeds
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup coconut sugar
- ⅓ cup almond milk (or other plant-based milk)
- ⅓ cup vegetable oil
- ¼ cup fresh lemon juice
- 1 tbsp lemon zest
- 1 tsp vanilla extract
- For Lemon Glaze (Optional):
- ½ cup powdered sugar
- 1–2 tbsp fresh lemon juice

Preheat Oven
Preheat your oven to 180°C (350°F) and line a loaf pan with parchment paper or grease it lightly. -
Mix Dry Ingredients
In a large bowl, whisk together the flour, poppy seeds, baking powder, baking soda, salt, and coconut sugar. -
Combine Wet Ingredients
In a separate bowl, mix almond milk, vegetable oil, lemon juice, lemon zest, and vanilla extract. -
Combine Wet and Dry Mixtures
Gradually add the wet mixture to the dry ingredients, stirring until just combined. Do not overmix. -
Bake
Pour the batter into the prepared loaf pan and bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean. -
Cool and Glaze
Allow the loaf to cool completely. If desired, mix powdered sugar and lemon juice to create a glaze and drizzle it over the loaf.
