Christmas Gingerbread Cookies (Vegan Option)

Serves: 24 cookies | Prep Time: 10 mins | Cook Time: 10 mins

Ingredients:

  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tbsp ground ginger
  • 1 tbsp ground cinnamon
  • ½ tsp ground cloves
  • ¼ tsp salt
  • ½ cup coconut sugar
  • ½ cup maple syrup
  • ½ cup softened butter (or vegan substitute)
  • 1 egg (or flaxseed substitute for vegan)

Instructions:

  1. Mix Dry Ingredients
    In a bowl, sift together flour, baking powder, ginger, cinnamon, cloves, and salt.
  2. Cream Butter and Sugar
    In a separate bowl, cream butter with coconut sugar until light and fluffy.
  3. Combine Wet Ingredients
    Beat in the egg and maple syrup until well blended.
  4. Incorporate Dry Mix
    Gradually add the dry mixture to the wet mixture, forming a dough.
  5. Chill the Dough
    Wrap the dough in plastic wrap and chill for at least 1 hour.
  6. Shape the Cookies
    Roll out the dough on a floured surface and use festive cookie cutters to shape.
  7. Bake
    Place cookies on a lined baking sheet and bake at 180°C (350°F) for 8-10 minutes or until lightly browned.
  8. Cool and Decorate
    Let the cookies cool before decorating with icing or sprinkles.
