Energy Protein Balls with Coconut Flakes

Ingredients:

  • ½ cup almond butter
  • 1 cup rolled oats
  • ½ cup medjool dates (pitted and finely chopped)
  • ¼ cup dried fruit (e.g., raisins, cranberries, or apricots)
  • 2 tbsp flax seeds
  • 2 tbsp hemp seeds
  • ½ cup shredded coconut flakes (plus extra for rolling)
  • 1 tbsp maple syrup or agave (optional, for sweetness)

Instructions:

  1. Mix Ingredients
    In a large bowl, combine almond butter, rolled oats, chopped dates, dried fruit, flax seeds, hemp seeds, and shredded coconut. Add maple syrup if desired.
  2. Form Balls
    Using your hands, roll the mixture into small balls, about 1 inch in diameter.
  3. Coat with Coconut Flakes
    Roll each ball in additional shredded coconut flakes for a decorative and flavorful coating.
  4. Chill
    Place the energy balls in the refrigerator for at least 30 minutes to firm up.
