Chickpea Salad

Serves: 4 | Prep Time: 10 mins

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 large avocado, diced
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled (or a dairy-free alternative)
  • 1/4 cup fresh parsley or cilantro, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper, to taste

Instructions:

  1. Combine Ingredients
    In a large bowl, combine chickpeas, avocado, cucumber, feta cheese, and parsley.
  2. Make Dressing
    In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  3. Dress the Salad
    Pour the dressing over the salad and gently toss to combine, being careful not to mash the avocado.
  4. Serve
    Serve immediately or chill in the refrigerator for 15 minutes for enhanced flavors.
